A domaine wine. Medium cherry-red colour. Wide, slightly diffuse but certainly perfumed red fruit aromas. In the mouth it’s a nice, not too ripe fruit that’s delivered with good texture that has a velvet feel. It’s a long (oak) tannin-led finish. A very good, slightly too young 2007.

Hmm I had this two years ago – but at Bouchard. This also starts with quite leafy aromas of undergrowth. Much narrower, this ripples its muscles right from the outset, never really softening up – I only had it in my glass for 30 minutes. The core is of sweet, dark red fruit. Overall mineral and long, but probably drunk 20 years too soon

Medium, medium-plus colour. The nose is very fine; there’s latent oak that brings a little espresso macchiato into the equation but essentially it’s about a fresh, dark red fruit and occasional faint whiffs of bacon. Smooth, fresh and intense, it’s a classic middle-years wine – forward acidity and a narrow, lean complexion, but long too. This will be excellent – eventually! I won’t open another for 5 years, but I expect I’ll need to wait another five for real dividends. Super.
2005 Bouchard Père et Fils Chablis Bougros
Pale yellow. Round and wide, still a little brioche and smooth ripe fruit. There’s a fatness that seems borne from less than generous acidity, yet your mouth waters in the good finish all the same. Same as when last tasted, it’s very rich but it’s sweet and relatively powerful. If anything it’s slightly better performing than the last bottle – Yum.

A little deaper colour. The aromas start a little heavy and more forward, at the core there is fine complexity but this builds additional dimensions and balance as it aerates – a few minutes in the glass, and the heavyness is gone replaced by a ’roundness’. Really beautiful texture, complex, and with mind-changing mid-palate complexity. As it builds in power it develops an almost buttery texture, but at its core rather than over your teeth and cheeks. Only eventually does the acidity leach from the side of your mouth to prolong the finish. Really special and very approachable today!
