Hervé was really in top form today, in the end it seems that we hardly had the time to taste wine…

The wines…

Most of the grand crus were on fining – but I am urged to return to taste.

To start with, 3 hectares of Petit Chablis and 10 hectares of Chablis, managed in Bio and bottled separately since 2013:

2013 Petit Chablis Dame Nature
From 2 zones; Flehy and Prehy ‘I find this very Portlandian’ – actually Thitonian’ says Hervé!
A silky width of clean and modest aroma. Wide, intense and with a solid base of minerality. Really intense in the finish with lots of herby but good flavour.

2013 Chablis Dame Nature
Also grapes from Flehy and Prehy plus some from Courgis too. 100% tank elevage.
Classic seashore aromas and faint lime skin. Plenty of energy, just a hint richer and also with plenty of minerality. Green skinned fruit – lovely wine here.

2013 Chablis Pearle
Has just a little ‘contact’ with wood.
A fine top note that has a lick of citrus. Rounder, with some sweetness and certainly ripeness. Very nice finishing and even a slight reboot of flavour in the finish. Something of a benchmark…

2013 Chablis La Sereine
Also a little oak here, and the main difference is the origin of the vines. This will be bottled just a little later.
More depth of aroma though still nicely fresh. Round, fresh fine acidity with a little more sweetness. Lovely, lovely finish though. Less tension but finer finishing than the last…

2013 Chablis Les Venerables
Also some depth of aroma here, with lime fruit. Lots of flavour attack too, with plenty of tension and even a mouth-watering sweetness to the flavours – lots of weight in the finish.

2013 Chablis 1er Vaillons
Not so wide but with a strong connection between the high and bass notes. Some green herb and a faint salinity. Round, good density and almost a classic sweet acidity – it’s trying very hard. Very good wine with a dark, almost reductive accent. Very fine.

2013 Chablis 1er Côte de Lechets
A higher toned more lemon than lime a hint of barrel. Very wide, and complex not the wine with the most tension, but really complex – and with super width again – very lovely.

2013 Chablis 1er Fourchaume
More weight of aroma, almost silky. No fat, very much lithe and mineral but with just enough sweetness to keep things interesting. Actually this is excellent. Expanding and offering more dimension and mouth-watering flavour in the finish.

2013 Chablis 1er Vaulorent
Nose is just a little tight. Quite large scaled in the mouth with fine tension – flowing over the tongue without weight but lots of complexity. The finish is modest but this is a really beautiful wine.

2013 1er Montée de Tonnerre
Really beautiful depth of aroma, almost suggesting a faint pineapple fruit above. Lithe, good energy – invigorating and rather mineral in the mid-palate but faintly austere. Again a modest but long finish. Very, very tasty.

2013 Chablis 1er Mont de Milieu
Aromatic weight, a hint of reduction on the nose, but inviting none-the-less. Large, round, very faintly rich, with power but really has the energy to bind and properly present the minerality and complexity. A really good wine.

2013 Chablis Blanchots
A big, round, complex and very inviting nose – yum! Of course, some of that was oak, but in the mouth this is much more lithe and sinuous than the nose leads me to believe, and with really excellent length too – super!!
