Guillaume offers some insight to the economics of fighting frosts:
“Well, we need 400 candles per hectare. Each candle might last for 2 nights, and the candles cost 8 euros each…”

Note, it was more than 10 nights of fighting the frost in 2017…

Guillaume on Guillaume:
I kept a foot here, but I was born and grew up in Paris, and of-course I like to return. Here the difference is that everyone knows who you are and what you do. It was my grandfather who quit using oak, and so it’s been done like that here, ever since – that’s about 45 years. Stainless-steel is neutral, easy to clean, and it’s consistent. I’m Cartesian – I don’t like extremes!

2014 Chablis 1er Forêts
A faint herb and a pretty yellow citrus. Ooh, mouth-watering sweetness, layers over the palate. Just totally delicious wine!

2014 Chablis 1er Montée de Tonnèrre
A deeper, more pungent nose, waxy lime and lemon. Wider, less intense, equally mouth-watering with a slight floral addition. More mineral in the finish. Really a beauty.

2014 Chablis Vaudesir
This has an aromatic that’s very similar to that of the Tonnèrre – with plenty of weight. More energy, more clarity, beautiful layers of finishing flavour. Simply gorgeous…

2013 Chablis 1er Montmains
Freshness, just a little of the vintage apricot. Round, very silky texture, a nice complexity and minerality. Tasty, tangy wine. This is super right now.

2013 Chablis 1er Montée de Tonnèrre
Extra freshness of aroma – in the mouth this is really effusive, complex, easy, delicious wine. Yum!

2009 Chablis Les Clos
Delicate, delicious, complex nose. There’s a little fat to the texture, tighter flavour, the nose is now brilliant, the palate only a little behind. But a lovely wine all the same. Bravo!
